PLANTAIN & EGGS
A mouth-watering serving of flavourful eggs with fried tender golden plantains.
INGREDIENTS:
- 3 eggs
- 2 plantains
- 1 tbsp onion powder
- 2 tbsp oyster sauce
- Oil
- 2 chopped tomatoes
- 3 tbsp chopped scotch bonnet peppers
- 2 tbsp chopped onions
- 200g fish fillet
PROCEDURE:
- Peel and slice 2 plantains then fry them. Once done, set them aside for later.
- Heat up some oil in a pot and add the chopped onions. Sauté this for 2 minutes then add the chopped tomatoes and chopped scotch bonnet peppers.
- Place the fish fillet in the sauce and add 2 tablespoons of oyster sauce. Let this cook for 5 minutes.
- Break 3 eggs into a bowl and season with a tablespoon of onion powder. Beat the eggs until all the ingredients are well combined.
- Pour the eggs into the sauce and combine everything together.
- Once the eggs are done frying, serve them with the fried plantains and enjoy the rest of the meal with a hot beverage or freshly squeezed juice.
