ONE POT PEPPERED WINGS

A hot and spicy one pot peppered chicken, made with butter, chopped peppers and other spices.

INGREDIENTS:

● 1kg chicken wings

● 1/3 cup oil

● 3 sticks butter

● 2 tbsp chopped onions

● 2 tbsp chopped garlic

● 1 cup chopped pepper (scotch bonnets, shombo/cayenne peppers, red bell peppers and tomatoes)

● 1 tbsp seasoning

● 1 tsp black pepper

● 2 tbsp curry leaves

● 2 carrots (diced into small cubes)

● 5 bulbs spring onions (chopped)

PROCEDURE:

1)  Rinse the chicken and pour it into a pan. Add 1/3 cup of oil and the 3 sticks of butter. Add the chopped onions, garlic and chopped pepper. Season with a teaspoon of black pepper, seasoning and other spices. Add the curry leaves and give the chicken a good stir. Ensure all the ingredients are well incorporated. Cover this and leave it to cook on low heat for 10 to 15 minutes.

2) Proceed to add the chopped carrots and spring onions. Stir this together and leave it to cook for 5 minutes.

3) Once the peppered chicken is done, take it off heat and serve with rice, spaghetti or food of choice.
