BOILED PLANTAIN & FISH SAUCE
Boiled plantain with a serving of a flavourful mackerel fish sauce.
INGREDIENTS:
● 2 plantains
● 1 mackerel fish (rinsed and deboned)
● 2 tbsp chopped onions
● 2 cups chopped pepper mixture (combo of 2 large tomatoes, 7 scotch bonnet peppers, 5 shombo/ fresh cayenne pepper, 1 red bell pepper and a large onion.)
● 2 tbsp chicken or crayfish seasoning
● ½ cup sweet corn
● Spring onions (chopped)
● 4 cloves garlic (chopped)
● 100g spinach
● ½ cup oil
PROCEDURE:
1) Cut each plantain into 4 pieces and boil for 30 minutes. Do not remove the skin whilst boiling.
2) Place the spinach in a bowl and soak it with boiling hot water to rid the vegetable of all its dirt. Do not soak the spinach for over 3 minutes. Drain the water, rinse it with cool water and chop the spinach into small pieces. Set this aside for later.
2) Heat up half a cup of oil in a pot, add chopped onions and chopped garlic. Sauté this for 1 minute.
3) Add in the chopped pepper mixture and season with seasoning. Proceed to add the mackerel fish, chopped spinach and sweet corn into the pot. Combine all the ingredients in the pot and leave it to cook for 15 minutes.
4) Peel the boiled plantain and serve with the mackerel fish sauce. Enjoy!
