This Nigerian soup is a combination of everything seafood. It is normally enjoyed with
swallow.
INGREDIENTS:
Pepper mixture: a combination of 4 tomatoes, 3 red bell peppers, 10 scotch bonnet peppers, 5
cayenne pepper/shombo and 1 large onion.
1 cup palm oil
Fish of choice
Crabs
Prawns or shrimps or both
½ cup chopped onions
2 tbsp crayfish seasoning
Crayfish
1 tsp salt
Corn starch
3 tbsp minced garlic
Calamari
Snails
Any other seafood of choice
PROCEDURE:
1) Wash all seafood thoroughly.
2) Heat up a cup of palm oil over low heat and add chopped onions. Fry the onions for 2
minutes.
3) Proceed to add the calamari first (because it takes longer to cook), then the fish, snails,
crabs, minced garlic, crushed crayfish and crayfish seasoning. Combine this well and
place the lid on the pot. Leave this to cook for 4 minutes.
4) Pour in the pepper mixture and combine this well with all the seafood in the pot. Ensure
to stir gently so you do not break the seafood. Leave this to cook for 15 minutes.
5) In a small cup, dilute 1 tbsp of cornstarch with half a cup of water. Stir until it is well
diluted. This step is optional.
6) After 15 minutes, pour the diluted corn starch into the soup to thicken it. This stage is
optional.
7) Leave the soup to cook for another 10 to 15 minutes then take it off heat.
8) This meal can also be prepared with okra and can be served with swallow. Serve the meal
anyway you fancy and enjoy!
