FISH PIE

Fish pie is a well-known African street food made with bread dough and a fried fish filling which is then fried.

INGREDIENTS:

Fish ingredients

● 1 large Titus fish (deboned and shredded)

● 1 cup oil

● 3 bulbs spring onions (chopped)

● ½ cup chopped onions

● 2 tablespoons scotch bonnet peppers

● 1 tablespoon seasoning

Bread Dough ingredients

● 1kg flour

● 3 tbsp unsalted butter

● 2 eggs

● 1 tbsp baking powder

● ½ tbsp nutmeg powder

● ½ tablespoon sugar

PROCEDURE:

1)  In a large bowl, sift the flour and add baking powder, nutmeg powder, sugar and salt. Combine this thoroughly.

2) Now, add the wet ingredients into the flour. Beat 2 eggs and pour it into the dry ingredients. Add the butter too.

3) Stir all these ingredients until the ingredients are well incorporated, then begin to add a bit of water at a time. As you add the water, ensure you are mixing the dough. Add a bit of water at a time until you have a ball of dough. Knead this for 2 minutes then cover it with a cloth.

4. In a pan, heat up a cup of oil and sauté with the chopped spring onions and chopped white or purple onions.

5. Add 2 tablespoons of scotch bonnet pepper for some extra heat and season with a tablespoon of seasoning. Stir this mix well.

6. Add the shredded Titus fish into the pot and stir until the fish has absorbed all the ingredients. Taste for salt, then set aside.

7. Toss some flour on a dry counter and place the ball of dough we had kept away on top of it. Knead the dough for 5 minutes then cut out small portions that will need to be rolled out to make each fish pie.

8. Roll each portion flat with a rolling pin. Ensure this portion cut out is not too big or small. A small sized portion is enough as it will appear bigger when rolled. Ensure the dough is rolled into a flat round circle.

9. Take a portion of filling and place it close to one end of the rolled dough. Close the dough and use a fork to seal the edges.

10. Heat up some oil for frying and carefully place the fish pies into the oil. Turn the pies occasionally on each side, ensuring not to burn the fish pie. Ensure the pie is frying on medium heat so as not to burn it.

11. Once the fish pie is done frying, take it off heat and place it on a paper towel.

12. Serve and Enjoy!
