A stew made with boiled cow leg, stock and blended fresh peppers.
INGREDIENTS:
• 1kg cow leg
• 1 cup cow leg stock
• 3 cups smooth pepper mixture
• 1 cup chopped pepper mixture
• 1 tbsp garlic
• 1 tbsp ginger
• 1 tbsp paprika
• 2 tbsp seasoning
• 1 tbsp all-purpose spice
• 1 cup oil
• 1/3 cup chopped onions
• 1 tbsp spice of choice
• 1 tsp thyme
• 1 cup tomato paste
• 2 tbsp jollof spice
• 1 cup water
PROCEDURE:
1) Rinse the cow leg and place it in a pressure pot (you can use a regular pot if you do not have a pressure pot). Add half a cup of chopped pepper mixture, a tablespoon of paprika, a tablespoon of seasoning, a tablespoon of all-purpose spice and any other spice of choice. Pour in 3 cups of water and let the cow leg cook and soften on low to medium heat.
2) In a Pot, heat up a cup of oil and sauté with chopped onions before adding the tomato paste. Fry this for 2 minutes then pour in the smooth pepper mixture.
3) Take the cow leg off heat and pour the stock into a bowl.
4) Season the stew with a teaspoon of thyme and 2 tablespoons of seasoning.
5) Pour in the cow leg stock and add the softened cow leg into the stew. Leave this to cook for 20 minutes on low heat.
6) Serve and enjoy!
