BANANA PANCAKES
Soft and fluffy homemade banana pancakes.
INGREDIENTS:
- 2 nearly overripe bananas
- 2 ½ cups all-purpose flour
- 1 ½ tbsp baking powder
- 1/3 cup sugar
salted butter - Pinch of salt
PROCEDURE:
- Sift the flour in a large bowl and add the baking powder, sugar and salt. Whisk this together until all the ingredients are well incorporated.
- In another bowl, peel and mash 2 nearly overripe bananas. You can mash it with a masher or a fork.
- Break 2 eggs in a small bowl, and add it to the mixture. Whisk the eggs and mashed bananas very well until they are well combined.
- Measure a cup of whipping cream and pour it along with melted butter, into the wet ingredients bowl. Whisk this well until well combined.
- Pour the dry ingredients into the wet ingredients batch by batch to achieve an ideal consistency. The batter needs to be thick but not too thick or too liquefied.
- Heat a small slice of butter into a pan and using a 1/3 size measuring cup, scoop the batter and gently pour it into the pan. Do not pour the batter all over, but simply pour it in the same place all at once. The batter will then spread on its own. If you do not have a measuring cup, you can use a large spoon to gage it with your sight.
- Let the pancake cook on the pan at the lowest heat. When bubbles begin to arise on the pancake, this is a sign to flip it on to the other side. Once it has browned to your desire, you may take it off heat. Do this until you’ve used up all your batter.
- Dress your pancakes with some maple syrup and enjoy.
