FRIED YAM & EGGS
Fried yam with a combination of eggs, sausages and veggies.
INGREDIENTS:
- ½ tuber yam
- 2 ½ cups oil
- 5 eggs
- 1 tbsp parsley flakes
- 1 tbsp chicken seasoning
- 200g chicken sausage
- 2 tbsp chopped scotch bonnet pepper
- 1 green and yellow bell pepper
- 3 tbsp chopped onions
PROCEDURE:
- Slice and peel half a tuber of yam into stick like shapes. Rinse the yams and set them in a bowl filled with water.
- Heat up 2 cups of oil and fry the yams. While the yams are frying, pour in ¼ cup water into the oil so the oil does not come out bitter. Pour this carefully and maintain a reasonable distance while after doing so. If your pan has a lid, pour in the water and immediately cover the pan.
- Take out a large bowl and place some paper towels inside it. Once the yams are done frying, gently take them out of the oil and place them in the bowl that has the paper towels inside it.
- Slice the bell peppers into small squares (quarters), slice the sausages and break 5 eggs into a bowl. Beat the eggs and season it if you desire to.
- Heat up ¼ cup of oil in a pan, sauté with the chopped onions for 3 minutes, then add the sliced sausages. Fry this for a minute then add a tablespoon of parsley flakes.
- Add the bell peppers and scotch bonnet peppers in now and stir. Season this mixture with a tablespoon of seasoning and stir for a minute.
- Now, pour the eggs into the mixture and combine it well with the veggie and sausage sauce.
- Once the eggs are done frying, serve it with the fried yams and garnish the yams with some parsley flakes.
- Serve and enjoy!
