STIR-FRY RICE & BEANS

A unique twist on the traditional rice and beans.

INGREDIENTS:

● 2 cups pre cooked beans

● 2 cups rice

● 1 tbsp chopped garlic

● 5 bulbs spring onions chopped

● 1/3 cup scotch bonnets 

● 1/4 cup oil

● 2 tbsp chopped onions

● 2 tbsp seasoning 

● 1/4 cup blended sesame oil

● 3 carrots diced 

● 1/3 cup green peas chopped

● 200g purple cabbage sliced thin

● 2 plantains diced and fried

PROCEDURE:

1)  Heat up some oil in a pot and sauté with the chopped onions, garlic and chopped spring onions. Sauté this for 2 minutes.

2) Add the scotch bonnets into the pot and let this fry 3-4 minutes on low heat .

3) Pour in the precooked beans. Stir this well with the other ingredients in the pot.

4) Add the rice and stir-fry for 3 minutes before adding 2 tablespoons of seasoning.

5) Add the chopped carrots, green peas, the rest of the spring onions and the sliced purple cabbage.

6) Proceed to pour the fried plantain into the stir-fry.

6) Add some blended sesame into the dish and stir-fry until the rice is ready.

7) Serve and enjoy!
