A healthy alternative to fatty pasta recipes.
INGREDIENTS:
- 400g spaghetti
- 1 ½ cup spinach
- 300g sweet corn
- 300g boneless chicken breasts
- 8 bulbs spring onions (chopped long)
- 2 tbsp lemon juice
- 1/3 cup olive oil
- 2 tbsp fresh parsley
- 3 tbsp seasoning
- 2 tbsp chopped garlic
- 1/3 cup fresh chopped pepper
- 1/3 cup chopped onions
- 1 tsp salt
PROCEDURE:
- Boil the spaghetti until al dente.
- Heat up the olive oil in a pan and sauté with chopped onions and garlic for 1 minute.
- Add the chopped pepper and sauté for another minute.
- Add the diced chicken breasts and fry it on low heat.
- Proceed to add the spinach and sweet corn to the pan, along with 2 tablespoons of lemon juice. Add a tablespoon of seasoning and stir it together.
- Once the spaghetti is al dente, take the spaghetti directly from the pot and place it in the pan.
- Add the spring onions and 2 tablespoons of seasoning. Stir this together.
- Pour 1/3 cup of pasta water into the pan.
- Cook the pasta until it’s done.
- Serve and enjoy!
