SPINACH & SWEET CORN CHICKEN SPAGHETTI

A healthy alternative to fatty pasta recipes.

INGREDIENTS:

  • 400g spaghetti
  • 1 ½ cup spinach
  • 300g sweet corn
  • 300g boneless chicken breasts
  • 8 bulbs spring onions (chopped long)
  • 2 tbsp lemon juice
  • 1/3 cup olive oil
  • 2 tbsp fresh parsley
  • 3 tbsp seasoning
  • 2 tbsp chopped garlic
  • 1/3 cup fresh chopped pepper
  • 1/3 cup chopped onions
  • 1 tsp salt

PROCEDURE:

  1. Boil the spaghetti until al dente.
  2. Heat up the olive oil in a pan and sauté with chopped onions and garlic for 1 minute.
  3. Add the chopped pepper and sauté for another minute.
  4. Add the diced chicken breasts and fry it on low heat.
  5. Proceed to add the spinach and sweet corn to the pan, along with 2 tablespoons of lemon juice. Add a tablespoon of seasoning and stir it together.
  6. Once the spaghetti is al dente, take the spaghetti directly from the pot and place it in the pan.
  7. Add the spring onions and 2 tablespoons of seasoning. Stir this together.
  8. Pour 1/3 cup of pasta water into the pan.
  9. Cook the pasta until it’s done.
  10. Serve and enjoy!
