A classic Nigerian delicacy made with pieces of turkey, fresh tomatoes and peppers as well as spices.
INGREDIENTS:
● 2kg smoked turkey
● Rough pepper mix (combo of tomatoes, shombo/cayenne pepper, scotch bonnets, onions and red bell pepper/tatase)
● 1 ½ cup chicken stock
● 2 tbsp chopped onions
● 80g ginger (grated)
● 2 tbsp minced garlic
● 2 tbsp chicken seasoning
● 1 cup oil
● 1 tsp basil
● 1 tsp coriander
● 1 tbsp jollof spice
PROCEDURE:
1) Pour the smoked turkey into a large pot, add a cup of stock along with ground coriander, basil, jollof spice and chicken seasoning. Give this a good stir.
2) Cover the pot and let it cook on low heat for 10-15 minutes.
3) Once the smoked turkey is done marinating, pour in the blended rough pepper mixture.
4) Stir the stew together and leave it to cook for 10-15 minutes.
5) Taste for salt or seasoning and add any if needed. Give the stew a good stir and take off heat when done.
6) Serve with rice, spaghetti or dish of choice. Enjoy!
