Meaty and spicy come together in this one pot of goodness made with ram meat, rice, veggies and other spices.
INGREDIENTS:
● 500g ram meat
● 2 cups rice
● ½ cup oil
● 2 tbsp chopped onions
● 2 tbsp chopped garlic
● 1 tablespoon seasoning powder
● 1 tablespoon fried rice spice
● 1 tablespoon ground coriander
● 1 tablespoon cayenne pepper
● 1 tablespoon native spice
● 2 tablespoons chopped scotch bonnet peppers
● 1 cup ram meat stock
● 1 cup water
● 4 bulbs spring onions (chopped)
● 4 carrots (diced)
● 3 tablespoons blended sesame oil
PROCEDURE:
1) Wash your ram meat and put it in a pot. Pour half a cup of oil over the meat and season with cayenne pepper, native spice, ground coriander and stir. Season with a tablespoon of seasoning before stirring once again.
2) Let this cook on low heat until the meat changes colour and has released considerable stock.
3) Wash your rice and add it to the pot. Add 2 tablespoons of chopped scotch bonnet peppers, a cup of stock and a cup of water. Cover the pot and let this cook until the rice has absorbed all the water.
4) After about 15 minutes, open the pot and add your chopped spring onions and carrots.
5) Add about 3 tablespoons of blended sesame oil, stir this together and let it cook on low heat for 5 minutes while stir-frying.
6) Serve and enjoy!
