Concussion rice made in an oven.
INGREDIENTS:
● 1/3 cup melted butter
● 2 cups rice
● 2 cups meat stock
● 1 tbsp crayfish powder
● 1 tbsp chopped garlic
● 1 tbsp minced ginger
● 2 tbsp sweet chilli sauce
● 2 tbsp seasoning
● 1 tbsp onion powder
● 2 deboned smoked fish
● 2 plantains
● 200g pre cooked and fried shredded beef
PROCEDURE:
1) Pour 1/3 cup of melted butter into a large casserole pan.
2) Pour in the beef stock as well, then proceed to add a tablespoon of crayfish powder, a tablespoon of ginger and garlic and 2 tablespoons of sweet chilli sauce. Give this a good stir.
3) Add 2 tablespoons of seasoning and a tablespoon of onion powder. Stir this well.
4) Add the deboned smoked fish into the pan and then proceed to add the parboiled rice.
5) Cover the pan with foil paper and bake in the oven for an hour at 200 degrees Celsius.
6) While the rice is cooking, peel and dice the plantains into small chunks and fry.
7) Once the rice is done cooking, bring it out of the oven and add the fried plantain and shredded beef into it. Combine this well with rice so that all the ingredients are well incorporated.
8) Serve and enjoy!
