Peppered snails with a pleasant fried plantain twist.
INGREDIENTS:
● 3 plantains
● 400g pre cooked and fried snails
● chopped fresh pepper mixture
● 1 red and yellow bell pepper (diced)
● 2 cups oil (for frying plantain)
● 1 cup oil
● 1/4 cup chopped onions
● 1 tbsp crayfish powder
● 1 tbsp chopped garlic
● 2 tbsp seasoning
● 1 tsp fresh parsley leaves
PROCEDURE:
1) Dice the plantain into small chunks and fry in 2 cups of oil. Set this aside for later.
2) Heat up a cup of oil in a pot and sauté with chopped onions. After sautéing for a minute or two, add a tablespoon of crayfish powder and the chopped garlic. Give this a good stir and let it fry for 30 seconds.
3) Add a tablespoon of seasoning into the pot then proceed to pour in the fried plantain and fried snails.
4) Add the chopped pepper mixture and season with a tablespoon of seasoning. Leave this to cook until nearly done (roughly for 10 minutes).
5) Add the bell peppers and parsley leaves, stir this together and cover the pot. Leave this to cook for another 5 minutes.
6) Serve and enjoy!
