Smoked catfish in a spicy pepper stew.
INGREDIENTS:
● 4 pieces smoked catfish
● Chopped pepper mixture: combination of 4 tomatoes, 10 scotch bonnets, 10 shombo/fresh cayenne pepper, 1 large red bell pepper and 1 large onion.
● 1 cup oil
● 2 tbsp chopped onions
● 1 tsp chopped garlic
● 2 tbsp seasoning
PROCEDURE:
1) Rinse and debone the catfish then set aside.
2) Heat up a cup of oil and sauté with chopped onions and chopped garlic.
3) Pour the chopped pepper into the pot and season with 2 tablespoons of seasoning.
4) Proceed to add the rinsed and deboned catfish into the stew. Stir this stew well and leave it to cook for 15-20 minutes.
5) Serve with rice or other dish of choice and enjoy!
