CABBAGE INFUSED SPAGHETTI

A healthy alternative to fatty pasta recipes.

INGREDIENTS:

  • 400g spaghetti
  • ½ cabbage (sliced thin)
  • 1 mackerel fish (boiled, deboned and mashed)
  • ¼ cup oil
  • ¼ cup chopped pepper
  • 3 tbsp onions
  • 1 tbsp garlic
  • 1 tbsp ginger
  • 100g curry leaves
  • ¼ cup sesame oil
  • 1 tsp dried herbs
  • ½ tsp salt
  • 3 tbsp seasoning

PROCEDURE:

  1. Boil the spaghetti until al dente.
  2. While the spaghetti is boiling, heat up ¼ cup of oil and sauté with chopped onions, ginger and garlic.
  3. Stir fry this on low heat and add the chopped peppers, half of the sliced cabbage and the mashed mackerel fish.
  4. Once the pasta is al dente, use a tong to pick it directly from the pot and place it into the pan.
  5. Add a teaspoon of herbs, 3 tablespoon of seasoning and the curry leaves.
  6. Finally, proceed to add the rest of the sliced cabbage into the pan. Stir everything together while ensuring not to break the pasta.
  7. Scoop 1/3 cup of pasta water and add it to the pasta. Let this cook until the pasta is done cooking,
  8. Serve and enjoy!
